World Vegetarian Day is coming up on October 1st this year, and it’s a wonderful occasion to celebrate the benefits of a plant-based lifestyle and explore the world of delicious vegetarian recipes. Whether you've been a vegetarian for years or are simply curious about reducing your meat intake, this special day offers an opportunity to indulge in the delightful flavours and healthful choices that vegetarian cuisine has to offer.
In this blog post, we'll introduce you to three delectable vegetarian recipes from our Coho East Georgia member, Yumasoy. Yumasoy makes marinated plant-based, chicken-style strips made with whole non-GMO soybeans and all recognizable, natural ingredients. Available in 4 different flavours, simply heat, toss with your favourite veg and/or carb, and delight in a delicious, wholesome meal.
From a mouthwatering Tortilla Wrap to a High Protein Plant-based Noodle Salad Meal Prep and a scrumptious Plant-Based Ranch "Chicken" Meal Prep, these recipes will showcase the ease and endless possibilities of vegetarian ingredients.
Tortilla Wrap
Ingredients:
Tortilla
Om Noms, Original
Tomato, sliced
Red Onion, sliced
Lettuce, shredded
Cheese, shredded
Sauce of choice (we used chipotle sauce)
Directions
Lay the tortilla down and cut it from the middle to one end
Cook the Om Noms, according to the instructions
Imagine the tortilla is divided in 4 quadrants
Add ingredients to each quarter in any way you like. We placed the Om Noms in the first quarter, the tomato and red onion in the second, the cheese and lettuce.
Add sauce over top of all ingredients.
Fold the wrap in a clockwise direction starting at the bottom up to the top left, then the top right and finally to the bottom right.
Eat as is or grill to your liking.
High Protein Plant-based Noodle Salad Meal Prep
Ingredients
Om Noms, Teriyaki
Ramen noodles
Salad mix
Salad toppers (pumpkin seeds and cranberries)
Poppy seed dressing
Directions
Cook the Om Noms and the noodles, according to the instructions
Cut up the salad mix or use a pre-made salad mix like we did
Apportion Om Noms, noodles and salad into meal prep containers.
Add dressing into ramekins and add to the containers
Top with salad toppers.
Plant-Based Ranch "Chicken" Meal Prep
Ingredients
Om Noms, Original
Sweet Potato, cubed
Broccoli, cut into bite-sized pieces
Ranch Dressing
Directions
Preheat the oven to 400 degrees F.
Clean and cube the potatoes and toss with olive oil and seasoning of choice.
Cut the broccoli into bite-size pieces.
Roast the potatoes for 30 minutes or until golden brown.
Roast the broccoli for 20 minutes or until golden brown.
Cook the Om Noms, according to the instructions
Apportion the potatoes, Om Noms and broccoli into meal prep containers.
Drizzle with ranch dressing.
